The restaurant made a distinction between Carolina and Texas bbq. Anyone know the difference?
I had leftovers for lunch and there's still another lunch or two left. Crapload of food.
Carolina is a vinegar based sauce. Texas more tomato paste/sauce based.
The Carolina ribs I had were a little sweet and had more sauce. In West Texas it's more dry rubs and very, very peppery. Brisket is far more popular than pulled pork, again with a spicy crust.
