The Carolina ribs I had were a little sweet and had more sauce. In West Texas it's more dry rubs and very, very peppery. Brisket is far more popular than pulled pork, again with a spicy crust.

I'm a big fan of KC barbecue, which is tomato/molasses based. Do love some Texas dry rubbed brisket though.

I ain't braggin', but I make amongst the very best pork spareribs in Texas, and have been told so repeatedly by guests at parties. Some of you suckers sail the boat back to Lola's with me, and I'll make some.

You won't mistake it for tofu.

Where do you find mesquite in Rhode Island?

My ribs aren’t bad and my spatchcock chicken and pulled pork are excellent. My Brisket is just OK but since a flat is around $60.00, I have to have a reason to cook one. Unfortunately my smoker is out of commission. Bought one made in the USA and now they went out of business so I can’t get parts. Going to have to adapt a different controller or just buy a new smoker and throw away a 2 YO, $1,000 stainless box.

Where did you guys keep the smoker on the submarine?

Being a concussed cuss, I gave away some excellent concert tix to an old rugby teammate who also hunts. A bunch of Elk tenderloins have magically appeared in our freezer, my absolute favorite meat. I'm trying to line up a venison blackstrap for the Bermuda trip.

Backstrap is awesome. I get some from my cousins who used to travel to Maine to hunt deer. Now there are more in Connecticut.

We didn't have one, per se. What we would do, is roll up a steel, TDU (Trash Disposal Unit) can and fill it with charcoal and lay a small grate over the top for the food.
I'm talking about a fresh, new can that was totally clean.
