Rick, (by the way) I was back in Helsinki a couple of weeks ago, and Hoku has become a favorite of the extended family (my daughter married a Finn). Ryan is truly a nice guy and really knows how to cook!

Ryan taught me how to make sushi. His is an interesting story. He was a marketing guy for Liberty Check back in the late 90s. He did extremely well and decided to 'retire'. Signed up with Cordon Bleu Culinary school in about 2003 or so in St. Paul. Now he owns his own Restaurant in Helsinki. He's very focused. His wife is a native Finn and they have been family friends for quite a while.
After culinary school he had us over for a fantastic dinner. The day before that, one of our daughters had a major stomach flu. As I sat there ready to dig in to a very complete selection of food, the flu hit me instantly. I barely made it to the can. It was pretty embarassing. Never got a chance to eat anything. Luckily there were plenty of left overs. I packed up a bunch and ate after the worst had passed.
I forgot, did you get him to make you some SPAM sushi? You will not believe how good that stuff is.
